Lila, Leath contribute to The Dole Nutrition Handbook
Mary Ann Lila contributed a chapter called “You Are what You Eat” to the The Dole Nutrition Handbook.
Dr. Mary Ann Lila, director of N.C. State University’s Plants for Human Health Institute at the N.C. Research Campus in Kannapolis, is a contributing author of the recently published book, The Dole Nutrition Handbook (Dole Nutrition Institute, 2010). Dr. Steven Leath, UNC system vice president for research and former associate dean in N.C. State’s College of Agriculture and Life Sciences, also contributed to the book, along with other N.C. Research Campus faculty members and researchers from across the country.
The book is written for average consumers who can glean practical, applied information about healthy food choices, while gaining an appreciation for the science behind the superfoods. It includes colorful photos of healthy foods and a chapter devoted to recipes featuring fruits and vegetables.
In one chapter, Lila explains scientific concepts related to nutraceuticals, their health benefits and their availability from foods, particularly fruits and vegetables. In another, Leath discusses how the role of nutrients in plants can often be paralleled to the role of nutrients in people, and, similarly, how plant compounds that convey protective properties in plants may function as nutraceuticals in people.
David H. Murdock, chairman of the Dole Food Company, spearheaded the project and visited the N.C. Research Campus in January for a book signing. The limited edition book can be purchased online directly from Dole. – Megan Bame
