NC Choices, CEFS to host meat conference in March

Registration is now open for the Carolina Meat Conference, March 25-27 in Concord. This first-ever statewide conference on meat production is sponsored by NC Choices and the Center for Environmental Farming Systems.
Independent meat producers, processors or butchers, retail grocers, chefs or food service professionals, Extension agents or interested consumer are all invited to attend this event that will focus on:
. hands-on training sessions to improve carcass utilization, value-added product development and artisanal butchery techniques;
. innovative marketing alliances and regional processing initiatives;
. emerging trends, marketing standards and regulatory issues; and
. the impact of production practices on meat quality, marketability and profitability.

Early registration rates run until Feb. 18. Some training sessions are limited to 25 participants and are available on a first-come, first-served basis so act now to secure a spot.
